What is Red Whole Lentils?

Lentils are a member of the pea family, grown in pods on a vine. They originate from the Mediterranean region but are also commonly used in Middle Eastern & Asian cooking.

The difference between red split lentils and red whole lentils;

Both of them are fastest cooking lentil, and they lose their shape easily and become mushy.

Red whole lentils will require a cooking time longer than red split lentils.

Green lentils have a stronger earthy flavour than the red lentils.

Red split lentils tend to work better in dishes like soups, curries, and purees as they provide a thicker texture, while whole lentils tend to work better in salads or side dishes.

How To Cook Lentils?

Do they need to pre-soak?

They don't need soaking but It's best to be safe and rinse and sift through them before cooking

Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes. For split red lentils, cook time is typically only about 8-10 minutes. Be sure to season with salt after cooking – if salt is added before, the lentils will become tough.

Ingredients:

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • ½ tablespoon tomato paste
  • 1 carrot chopped, 1 potato chopped
  • 1 ½ cups red lentils
  • 1 teaspoon salt
  • 1 tsp Aleppo pepper, ½ tsp black pepper
  • 6 cups water
Frying dry mint with oil

In a saucepan, heat up a 1/4” of vegetable oil/olive oil. The oil is ready for frying once it sizzles. Drop a few mint leaves in at a time and fry for 10-15 seconds on each side or until the leaf takes on a stained-glass look.

Instructions :

Heat olive oil in a pot over medium heat.

Saute onion until golden. Add tomato paste and cook for a minute.

Add in carrots and potatoes and cook for a couple of minutes.

Pour in the water and bring the soup to simmer.

Add the red lentils, salt, Turkish red pepper and black pepper. Stir well and cook for a minute.

Cook covered on medium heat for 20 minutes. Uncover and cook for another 10 minutes until the lentils are completely cooked(Vegetables should be soft).

Blend the soup in the blender or using an immersion blender until it's creamy and smooth.

Serve warm with a squeeze of lemon and fry mint oil sauce
