How to Use Freekeh in Recipes
Freekeh works beautifully in lots of dishes — it's delicious in casseroles, soups, pilafs and salads.
How to Cook Freekeh
Ingredients: Aksoy Freekeh, Aksoy Dry Chickpeas (soaked overnight), cumin seeds, lemon juice, garlic, Aksoy Hot Pepper Flakes, celery, green onions, parsley, mint.
- Heat a medium pot, add the cumin seeds and toast for about 1 minute until fragrant. Remove half the seeds and set aside.
- In the same pot, add the freekeh. Toast over medium heat for a few minutes until it starts to brown slightly.
- Add the chickpeas and broth. Cover and simmer for 20 minutes until the liquid is absorbed and the freekeh is tender. Remove from heat and keep covered for 10 minutes.
- While the freekeh cooks, prep the veggies and herbs. In a small bowl, combine the lemon juice, garlic and black pepper.
- Transfer the freekeh to a medium salad bowl and add the lemon juice mixture. Mix well.
- Mix in the celery, scallions, mint and parsley. Top with the remaining cumin seeds. Taste and add more lemon juice if desired.
